Flap meat or flap steak is a thin, relatively lean, coarse-grained steak that comes from the near the same area as flank steak. It's great marinated on the grill as a steak or cubed and put on skewers. Really good for tacos too! It has a coarse texture that grabs onto marinades and seasonings. It's even great as a slow-cooked braise.
