As the lactose content decreases during the two-year aging process, crystallization occurs, which makes its consistency more brittle to the bite. The result is a robust, mature, ivory-hued, no-nonsense sharp Vermont cheddar that would wear a plaid flannel shirt, chop your wood and build you a fire if it could.

The Plymouth cheese factory was built in 1890 by Colonel Calvin Coolidge, a dairy farmer, looking to extend the shelf life of his milk.

Raw milk is sourced from a local dedicated herd of Holsteiner & Jersey Cows.

The Plymouth Cheese Factory was built in 1890 by Col. John Coolidge, a dairy farmer, looking to extend the shelf life of his milk. He was sworn in as 30th President of the U.S.A. in the middle of the night in 1923 at his childhood home.
